Me, a little slow? Not at all! I've just missed Christmas and New Year's Eve, events about which I would have been happy to write a little something, along with a photo or two. Oh well, you can't win'em all. When several projects try to mature at the same time in the same head, the latter can sometimes lose track. Or let it look that way.
In the first chapter of the guinea-fowl cycle, we will talk about Christmas Eve. Truth is, on that night, my lover and I only ate nibbles and drank a lot of wine. The next day being all boozed up, Christmas lunch happened around 8 or 9 PM and came with still water.
So here are some good old frozen sausage filled puff pastry thingies, along with industrial foie gras which I could pass on, to tell the truth, but the honey awaits Christmas for that sole reason. Yup. There were plenty of other industrial goodies on d-day, smoked salmon, tarama… and as for greenery not so much. Christmas Eve was anti-ecological, anti-anti-globalist, anti-gourmet, anti-health. I even bought paper tablecloth, paper plates, and party paper napkins (changes from the usual paper towel!). I wouldn't say I am super proud of this regressive Christmas eve, but you can't always be perfect, one has to go against the rules sometimes.
The next day, on the other hand, we let ourselves be tempted by more noble feasts. Oh no, you're missing the idea! No oysters, no caviar, no scallops, no truffles, no morels (mushroom), or god knows what else… Just one poultry, and a terribly expensive one, along with chestnuts, potatoes and green beans. We are talking about a guinea fowl capon, the existence of which I wasn't aware of until then. I chose it thinking it would be cheaper than an otherwise Bresse labeled guinea fowl, and I was right, give or take a few cents. I am not very familiar with guinea fowls in general and I wanted to change from the traditional capon or turkey. I was in the US for thankgiving so certainly not turkey!!!!! Considering the quality of my little (ummm…) guinea-fowl capon, I chose to roast it in the simplest of ways with sea salt a teeny tiny bit of olive oil, in a teeny bit of water, with it's christmastic accompaniments, well especially the chestnuts. I even tried to attach the limbs for an evenly cooked result. The way I attached the drumsticks may have helped a little and is not too shamefull, contrary to that of the wings which is pretty ridiculous!!! (we can see the string in the photograph of the pan with the poultry, potatoes and chestnuts).
This is mid-cooking time, I have just added the chestnuts and am about to stick the pan in the oven again.
This is a christmas meal the way I like it, simple and good!
And for dessert, of course, a yule log, when I celebrate christmas with my family, nobody likes it, including me, but it's christmas, by George! And to have a clear conscience, but also because they're good, corsica clementines and local kiwis. A little wrinkled, the kiwi, you say? Yes. It hasn't been all around the world, so it doesn't go from the "not ripe yet" stage directly to the "rotten" stage!!!
On this note, happy new year to all! I'm pretty optimistic that I will wake up tomorrow learning the breaking news: Kim Jong-un announces to his powerfull entourage: "naaaa, just kidding, actually I want to build a real democracy and make peace with the rest of the world". On a more realistic note, in 2012, conflicts may end in a civilized manner, the current crisis will not lead to a chain reaction electing extreme parties and dictator-presidents, neither in France, in the US, nor anywhere else. No autoritarian regime, no terrorist attack, no genocide will lead to world war three. And secretly, I hope we will realize the solutions to environmental issues must be matched and paralelled to all other problems on the planet, starting with famine and war (ok, I admit, religious conflicts don't seem to be linked to ecological issues). All this, just to say, in 2012, everything will be allright, and yes we will see 2013. Best wishes!…
